This coffee comes from the Chiroso De San Carlos Project run by Forest Coffee in Antioquia. This is our second time buying from this project and this time around we purchased two different processes of the same coffee.
Chiroso is a relatively rare variety that was originally discovered in this region, and this project is focused on unlocking its full potential while supporting the producers who grow it. A group of 10 smallholder farmers work together here, refining their processing and selection to highlight what makes Chiroso unique: high clarity, layered sweetness, and a bright, structured acidity.
The coffee is grown in the Penderisco River valley at around 1,800 meters above sea level, where cool temperatures and high elevation help develop complexity and density in the cup.
Processing is clean but intentional. Cherries are selectively handpicked, then go through a short aerobic fermentation followed by an extended anaerobic fermentation to build sweetness and structure. After washing, the coffee is dried slowly on patios and stabilized, resulting in a cup that is both vibrant and well-defined.
