We roast on Mondays and Tuesdays. Orders placed by 7am on Monday will be fulfilled the same week. If you place an order after the deadline please expect your coffee to be shipped the following week.
Here at Pettibone coffee we are committed to providing only the finest coffees. Ground coffee will oxidize and become stale within hours of grinding it which in return, will lead to a much less satisfying cup of coffee for the consumer. Because of this we only sell whole bean coffee and recommend that our customers grind their coffee as close to brewing it as possible.
While our coffee tastes great fresh, we think it tastes even better with a few weeks of rest. Our coffee tastes best between 2-5 weeks off roast. Assuming it is properly stored we have tasted some amazing roasts 2+ months after the roast date.
It depends. We never recommend freezing ground coffee. To successfully freeze coffee beans please do the following:
Ideally allow the coffee to rest for a 2-4 weeks before freezing.
Only freeze coffee in airtight packaging. (Vacuum sealed is best)
Freeze coffee in small portions. Ideally you would freeze individual portions but you can also freeze amounts that you will use in 3-4 days.
If freezing individual portions, grind straight out of the freezer. If freezing in small batches, allow coffee to fully thaw before opening. Use within 3-4 days
Never thaw and refreeze coffee.
Always put coffee in the coldest portion of the freezer where it will not experience temperature changes from the door opening.

We always recommend using our coffee around 2-5 weeks off roast. Grind as fresh as possible and use clean, filtered water (or distilled water with lotus water drops/third wave water packets). We recommend always using a scale to measure your coffee and water. Start off brewing at a 17:1 water to coffee ratio. Adjust your ratio up or down according to the strength you are looking for.
