Finca El Espejo is located in Santa María, Huila, Colombia, and is managed by Reinel Borbon, a second-generation coffee producer with over 15 years of experience. The farm spans roughly four hectares at 1,850 meters above sea level and is planted with a mix of Pink Bourbon, Caturra, and Colombia varieties.
Each lot begins with a careful harvest of ripe cherries, followed by an initial 20-hour dry fermentation in cherry before being depulped. The coffee is then fermented in open tanks or barrels for an extended period before being fully washed and dried on raised beds over the course of 14–18 days, depending on conditions.
The result is a coffee that balances structure with expressive fruit. Expect a profile built around red fruit and berry-like sweetness, with a clean finish and a subtle depth from the extended fermentation.
