Papayo is one of the most exciting emerging varietals coming out of Huila, Colombia right now; a rare Ethiopian-landrace related variety known for intensely tropical and aromatic cup profiles. This lot pushes those characteristics even further through an extended 96-hour fermentation and carefully controlled drying process, resulting in an incredibly expressive and layered cup.
In the cup we find vibrant tropical fruit notes reminiscent of mango, strawberry, pomegranate, and passionfruit layered over a silky sweetness and delicate citric acidity. The profile is intensely aromatic and fruit-forward while still remaining clean and structured. The extended fermentation amplifies the coffee’s tropical character without overwhelming the cup, creating something that feels both wild and refined at the same time.
Produced through Forest Coffee’s innovation-focused processing program in Colombia, this coffee showcases the increasingly experimental direction of modern Colombian coffee production while still maintaining clarity and balance in the cup.
