Bright Yellow is one of the more experimental lots coming out of Los Patios, a processing and R&D facility operated by The Coffee Quest in Huila, Colombia. The project works with small producers across the region, bringing their coffees together and refining them through controlled, highly intentional processing.
For this lot, cherries are first fermented for around 12 hours before being depulped and delivered to Los Patios. Once there, the coffee undergoes a second fermentation phase where it’s combined with a natural peach concentrate and a proprietary solution designed to enhance and stabilize flavor development. This stage lasts roughly 48 hours, followed by a slow, carefully managed drying period of 12–16 days.
The result is a coffee that leans unapologetically expressive. It’s tropical, juicy, and a little wild but still structured. Expect a cup built around ripe peach and pineapple with a soft, rounded body and a sweetness that carries all the way through.
