Cup Notes: Caramel, Mandarin Orange, Toasted Almond

This group, of 10 farms, first came together in 2015 in an effort to acheive better prices and volume for their crop. They were look- ing for a way to have a more direct relationship with the roasters. The original 10 farmers in this collective produce up to 20 tons per year, and are planning to expand their association to increase their production. This particular lot was fermented for 12-36 hours before being washed 2-3 times. The drying time is typically between 6-7 days and takes place on rasied beds placed underneath plastic tunnels. The coffee is moved every 4 hours to ensure even drying.
