Our second offering from Wilder Lazo features Aruzi, an unusual coffee variety reported to have been discovered in Inzá, Cauca. While accounts of laboratory testing suggest a connection to Ethiopian coffee genetics, its precise lineage remains unconfirmed.
This lot was fermented in its mucilage for 36 hours before being washed and dried on raised beds for 12 days. We then had it airfreighted directly from Colombia to our roastery.
In the cup, we find layers of sweet stone fruit, bright citric acidity, and a distinctive ginger-like spice, rounded out by an herbaceous character. We have enough for just two roast batches, making this a very limited opportunity to try Wilder’s Aruzi.
