Oscar and Francisca Chacón are third-generation coffee producers and the team behind Las Lajas, one of Costa Rica’s pioneering micromills. Driven by a desire for greater control over quality, they began processing their own coffee in 2005 and became early innovators in both Honey and Natural processing in Costa Rica.

That spirit of experimentation has continued to shape Las Lajas. When an earthquake disrupted electricity and water during the 2008 harvest, Francisca drew inspiration from African coffee production and began drying whole coffee cherries on raised beds. What began out of necessity became an important part of the mill’s approach, helping establish Las Lajas as a producer known for expressive, fruit-forward coffees and thoughtful processing.

This lot is composed of H1, also known as Centroamericano H1, a hybrid of Sarchimor T5296 and Rume Sudan. The variety was developed to increase genetic diversity while combining strong agronomic characteristics with exceptional cup potential.
