Ombligon is a rare varietal that has been quickly gaining popularity amongst the specialty coffee world. The cherries of this varietal have a small indent resembling a belly button which is how they get their name, ombligon, which means belly button in Spanish. It is known for its intensity and very prominent flavors of red fruit such as cherry and cranberry. This particular lot from El Placer has an incredibly clear and unmistakable note of cinnamon. We like to brew this coffee at a slightly stronger ratio of 16:1 to make for a very punchy and intense cup. If it is too intense, longer ratios like 17:1 are also very good and produce a more balanced cup.
